How to Make Pancakes With Cheese

If you’re hesitant to add cottage cheese to your pancake mix, take a culinary risk. Not only will cottage cheese give your pancakes a healthy dose of protein, it’ll make the breakfast favorites fluffy and tender. It’s simple to add cottage cheese to the pancake mix, but the small effort will go a long way in pleasing hungry family members. Top the pancakes with maple or fruit-flavored syrup, along with fresh blueberries or strawberries, as an added treat.
To Make Pancakes With Cheese You’ll Need:
- 1 cup unbleached flour
- 1/2 tsp. baking soda
- 2 tbsp. sugar
- 4 eggs
- 1/2 cup milk
- 2 tbsp. vegetable oil
- 1 cup cottage cheese
- 1 tbsp. natural vanilla extract
- Large mixing bowl
- Wire whisk
- 1/2 cup fresh blueberries or sliced strawberries (optional)
- Cooking spray
- Non-stick skillet
- Ladle
- Spatula
- Toppings such as syrup, butter and fresh fruit to taste
To Make Pancakes With Cheese Instructions:
- Place 1 cup of unbleached flour, 1/2 tsp. of baking soda, 2 tbsp. of sugar, four eggs, 1/2 cup of milk, 2 tbsp. of vegetable oil, 1 cup of cottage cheese and 1 tbsp. of natural vanilla extract in a large mixing bowl. Combine the ingredients with a wire whisk until the batter is well blended.
- Add 1/2 cup of fresh blueberries or sliced strawberries to the batter if you desire.
- Cover a non-stick skillet with cooking spray. Turn the skillet on to “Medium-High” and pour batter onto the skillet to create each pancake in the size you desire.
- Cook the pancakes on the first side until bubbles appear on the top and the bottoms are golden brown. Turn the pancakes over with a spatula and cook them until the opposite side is golden brown as well.
- Place the cottage cheese pancakes on individual plates and top them with fresh fruit, butter or syrup to taste.
